Easy Prime Rib Au Jus Recipe

Roast beef is one of my favorite meals to make for my family - especially prime rib! Whenever I make prime rib at home, I like to save the pan drippings to make a sauce. It's the best way to keep the meat tender and moist even when reheating it. You can even use it to make Leftover Roast Beef Sandwiches!

Prime rib pan drippings are just what you need to make the most incredible homemade au jus for beef! Using an easy 5-minute method, I will show you how to make au jus with a beef base from prime rib drippings and 3 other simple ingredients.

I also love making roast beef! It is so good when paired with my dutch oven pot roast recipe. Pair Au Jus with your holiday prime rib or smoked beef brisket. It adds juice and makes all beef recipes just a bit better. Enjoy!

Homemade Au Jus FAQs

What is au jus?

Au jus is a light sauce made from the pan drippings of beef, pork, or chicken. Beef au jus is a common dipping sauce for roast beef sandwiches like the French Dip Sandwich, and pairs especially well with prime rib.

What's the difference between gravy and au jus?

Gravy is thicker than au jus, typically using a thickener such as cornstarch or flour, and is poured over a meal, while au jus uses no thickener and is most often used as a light sauce for dipping.

What is au jus made of?

Beef au jus sauce uses the drippings of a beef roast, Worcestershire sauce, beef broth or the juices from roast beef, and red wine.

What type of red wine should you use in au jus?

Use a dry red drinking wine, not a cooking wine, for best results. The au jus will contain the flavors of the wine you use, so you want to use one you will enjoy.

Is au jus gluten-free?

Double-check both your beef broth and your Worcestershire sauce, and make sure your prime rib uses no glutenous ingredients. If none of these three ingredients contain gluten, au jus is gluten-free.

How to Make Au Jus

  1. Place the roasting pan from cooking prime rib on the stove over low heat after removing the roast from the pan. If you prefer, you can also use a separate pan to cook the beef au jus.
  2. Whisk Worcestershire Sauce and Red Wine into the dish along with drippings from the beef. If using the original roasting pan, scrape up any brown bits from the bottom of the pan for extra flavor. A wooden spoon works best for this.
  3. Add Beef Broth or juices from the prime rib. Bring to a simmer. Serve hot with sliced prime rib, and enjoy!

Allow your beef au jus to cool, then store in an airtight container in the refrigerator for up to 3 days.

How to Freeze Au Jus

Let your au jus cool first, then store in an airtight, freezer-safe container with enough room for expansion at the top (at least an inch of space). Store in the freezer for up to 3 months and reheat on low heat over the stove. Alternatively, store in an ice cube tray, then transfer to a freezer bag, for individual portions of au jus.
